Tuna: -1-8oz block of yellowfin tuna -black & white sesame seeds -kosher salt Lightly salt the Tuna, cover all sides with sesame seeds. Sear on high heat fifteen seconds per side. Dressing: -1/2 cup salad oil -1/4 cup olive oil -1/4 cup sesame oil -1/2 cup rice wine vinegar -2 TBSP soy sauce -1 1/2 TBSP sambal oelek (Asian chili paste) Whisk all ingredients together untill emulsified. Slaw: -red cabbage -carrot -daikon radish -leeks -1/4 cup salted cashews Small julien the vegetables. Combine vegetables with cashews and dressing. Slice the seared tuna and place over the vegetable slaw. Bananas Foster -1 banana -1/2 cup brown sugar -1/2 oz banana rum -1/2 oz creme de cocoa Peel and slice the banana. In a saute pan combine the banana slices, brown sugar and both liquors. Turn on high heat, take caution since the alcohol vapor is highly flammable. Use a lighter to ignite the vapor. Simmer till all alcohol has burnt off. Serve with vanilla ice cream. |
