Gerhardt`s Krautrouladen (Stuffed Cabbage Rolls)

Ingredients: 1 Head cabbage, green 4 strips of bacon (optional) 1 medium onion chopped 3/4 pound ground beef 2 cups Minute rice 1/8t paprika 1/2t salt 1/4t black pepper 1 46oz can tomato juice (or V8) 2t sugar Remove 12 to 18 cabbage leaves (depending on size; enough to make six "squares" approx. 8" each). Blanch in boiling water for 5 minutes. In fry pan, sauté`` onion until clear. (Or bacon, until crisp. We do not use so that it remains a low fat meal) Mix ground meat, rice and seasonings with onion (& bacon). Mentally divide filling into 6 equal portions, placing 1 portion on each square of leaves. Roll up, folding in ends first and secure with toothpicks. Chop the remaining cabbage and place in the bottom of a 2qt. casserole with approx. 1/2 cup tomato juice and mix. This helps to prevent any sticking. Place cabbage rolls on top and pour remaining tomato juice over top - enough to cover. Sprinkle with sugar. Cover casserole and bake one hour in preheated 325 oven. If sauce is too thin, uncover last 1/2 hour of baking. Recipe Provided by: Gerhardt`s
