Rex Rich Banana Bread from Clabber Girl

Yield: 1 loaf
1 C. very ripe banana - mashed (about 3 bananas)
1 ¼ C. dark brown sugar, firmly packed
¼ C. oil
2 eggs
2 tsp. pure vanilla extract
2 tsp. cinnamon
¼ tsp. cloves
1 tsp. baking soda
1 tsp. Clabber Girl Baking Powder
¼ tsp. salt
1 2/3 C. all-purpose flour
½ C. REX Coffee, brewed
1 C. shaved chocolate (optional)
1 C. chopped walnuts or pecans (optional)
Preheat oven to 300 F. Spray a 9x5 inch loaf pan with non-stick cooking spray.
In a mixing bowl, combine the sugar, oil, eggs, and vanilla until smooth. Add in the dry ingredients and bananas and blend, pouring in the coffee as mixture is blending. Mix until smooth.
Spoon into prepared loaf pan and bake for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean.
