1/3 C. apple cider vinegar
2 scallions (chopped)
3 TBSP fresh basil (chopped)
1 TBSP Dijon mustard (can substitute w/ sour cream or yogurt)
3 TBSP brown sugar
2/3 C. virgin olive oil
sharp cheddar cheese (grated)
Core and slice apple while on its side. Grill apple slices until tender/crisp. Set aside.
Make dressing by pouring vinegar into bowl. Add scallions, basil, mustard and brown sugar.
Pour olive oil slowly into bowl, whisking constantly.
Arrange spinach and greens onto a plate. Top with grated cheese, toasted pecans and the grilled apple slices. Drizzle the dressing on and enjoy!
