Clabber Girl Recipes - Focaccia Bread

Ingredients
4-1/2 tsp dry yeast
2 C. warm water
1 TBSP sugar
5-1/2 C. flour
1 TBSP salt
3 TBSP olive oil
Combine yeast, 1 cup of water and 1/2 the sugar and allow to bloom. In an electric mixer with a dough hook add remaining dry ingredients. Add bloomed yeast and olive oil. Add remaining water slowly and mix until dough has a satin feel--about 8 minutes (may not need all of the water or you may need more depending on the weather, proper flour measurement, etc.)
Place dough in an oiled bowl and cover with a wet towel or plastic film and allow to rise (should double in size -- about 45 minutes. Punch down and with your hands spread dough out on a greased baking sheet. Should be about 1/2 inch thick. Rub top with olive oil and top with your choice of toppings. Cover with plastic wrap and allow to arise (about 20 min.) Bake at 450 degrees until golden brown on top and bottom.
