2 Fresh Cod Filets (about 6 - 8oz. portions)
4oz. Chopped Pecans
1 Tbsp Cajun Seasoning
3 - 4 Tbsp Olive Oil
8 oz. Fresh Baby Spinach
1 small Shallot, diced
2 oz. Goat Cheese
Zest the orange and finely dice the zest. Fold 2 tsp. of the zest into the goat cheese and store in refrigerator until ready to serve for up to one week.
Place cod filets in a baking dish (sprayed with non-stick spray). Season with Kosher salt, top each filet evenly with pecans, and sprinkle with Cajun seasoning. Drizzle about 1 tablespoon olive oil over each filet. Bake the cod in a 375 oven for 8 to 10 minutes or until fish is firm or 145 internal temperature.
In a medium to large skillet, add the remaining olive oil, shallots, and spinach. Toss around the spinach on high heat until wilted. Serve the cod on a bed of spinach, garnished with the citrus goat cheese.
