Twice-Baked Potato Casserole

Ingredients: 6 medium unpeeled potatoes, baked 1/4 t salt 1/4 t pepper 1 lb. sliced bacon, cooked & crumbled 3c (24oz.) sour cream 2c (8oz.) shredded mozzarella cheese 2c (8oz.) shredded cheddar cheese 2 green onions, chopped Cut baked potatoes into 1 inch cubes. Place half in a greased 13-in X 9-in baking dish. Top with half of sour cream and cheeses. Repeat layers. Bake, uncovered, at 350 degrees for 20 minutes or until cheese is melted. Sprinkle with onions. Yield: 6-8 servings Recipe Provided by: Patrick`s Restaurant & Bowling Center
