1-1/2 C graham cracker crumbs
1/2 C sugar
6 T melted butter
2 T dark rum or 2 tsp. rum extract
Comine together until ingredients resemble a coarse meal. Press into a 9 or 10-inch pie pan.
3 egg yolks
1-14 oz. can condensed sweetened milk
1/2 C key lime juice
Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie crust and bake at 350 degrees for 15 minutes. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream and garnish with lime slices and/or mint leaves.
