Clabber Girl Recipe for Skillet Cornbread

Skillet Cornbread

4 Strips Bacon - diced
1/4 C. Green Bell Pepper - diced
1/4 C. Red Onion - minced

In an oven proof 9-inch skillet cook bacon until medium crisp.  Add peppers and onions and saute' until soft. Remove from heat.

1 C.  Yellow Cornmeal
1 C.  All Purpose Flour
4 tsp. Clabber Girl Baking Powder
2 TBSP Sugar
1/2 tsp. Salt

Mix all dry ingredients together with a whisk.

1 C.  Milk
1/4 C. Oil
1 Egg

Mix all wet ingredients together until blended.  Pour into dry mixture and stir until completely blended.  Pour on top of bacon mixture in skillet.  Bake in a preheated 425-degree oven for 20-23 minutes or until golden and the center comes out clean when a toothpick is inserted.
